Zucchini Chicken Pasta
A healthy and light pasta dish that is perfect for summer.
ingredients
- 375g spaghetti
- 2 tbsp margarine
- 2 cloves garlic, crushed
- 350g skinless chicken breast, sliced
- 6 small zucchinis, grated
- finely grated rind of 1 lemon
- 2 tbsp grated Parmesan
- 1/4 cup light sour cream
- 1 tbsp chopped parsley
- 3 spring onions, sliced

Cook pasta according to packet directions.

Meanwhile, melt margarine in a large frying pan and fry garlic and chicken until lightly browned. Add zucchinis and cook until softened.

Combine lemon rind, parsley, onions and cheese in a bowl.

Drain pasta and add to zucchini and garlic. Add sour cream and half of the cheese mixture; stir gently over low heat until heated through. Sprinkle with remaining cheese mixture and serve.
