Dhal Soup
ingredients
- • 2 Tbsp butter or olive oil
- • 2+ garlic cloves - crushed
- • 1 onion - chopped
- • 1/2 tsp turmeric
- • 1 tsp garam masala
- • 1/2 tsp chili powder
- • 1 tsp ground cumin
- • 2 1/4 pounds canned, chopped tomatoes, drained
- • 1 cup red lentils
- • 2 tsp lemon juice
- • 2 1/2 cups vegetable stock
- • 1 1/4 cups coconut milk
- • salt and pepper
- • chopped cilantro and lemon slices, to garnish (optional)

1. Melt butter or olive oil in large saucepan and sauté onion and garlic for 2-3 minutes.

2. Stir in tomatoes, red lentils, lemon juice, veggie stock, and coconut milk and bring to boil. (Add small quantities of hot water to the pan while the lentils are cooking if they begin to absorb too much of the liquid.)

3. Reduce heat and simmer for 25-30 minutes, until the lentils are tender and cooked.

4. Season to taste and spoon soup into warm tureen (or directly into bowls).

5. Garnish with cilantro and lemon if desired.

Serve with naan bread.
