Salmon Grill Packets
A meal all in one.
ingredients
- 1 c couscous (precooked)
- 1/3 c roasted cashews, chopped
- 5 scallions - 3 chopped, 2 for garnish
- grated peel and juice of 1 orange
- 1/4 c dry sherry
- 2 1/2 T soy sauce
- 2 1/2 T rice wine vinegar
- 1 T toasted sesame oil plus more for brushing
- 1 1/2 T grated fresh ginger
- 4 c baby spinach
- 4-6 oz. skinless salmon fillets
- salt & pepper

Preheat grill. In a small bowl, combine couscous, cashews, chopped scallions and orange peel; set aside.

In a measuring cup whisk together the orange juice, sherry, soy sauce, rice wine vinegar, 1 T sesame oil and the ginger; set aside.

Tear off four sheets of aluminum foil; brush the center with sesame oil. Divide the couscous mixture evenly among the 4 pieces of foil. Top each pile with 1 c baby spinach and fish fillet; season with salt & pepper.

Whisk the grilling sauce and pour about 1/4 c into each packet. Roll up the edges of the foil to seal.

Grill the packets over indirect medium heat, with the lid down, for 25 minutes. Let the fish rest for 3 minutes before opening the packets. Garnish and serve.
