Apple and Oat Bran Muffins

ingredients

  • 1 1/4 c whole wheat flour
  • 1 c oat bran
  • 1/3 c packed brown sugar
  • 2 1/2 t baking powder
  • 1/4 t baking soda
  • 1/4 t salt
  • 1/4 t ground nutmeg
  • 1/4 t ground cinnamon
  • 1 c buttermilk
  • 2 egg whites
  • 2 T canola oil
  • 3/4 c apple, peeled and cut into small chunks
  • chopped nuts (optional)

    In a medium bowl stir together flour, oat bran, brown sugar, baking powder, baking soda, salt, nutmeg & cinnamon.

    In a small bowl combine buttermilk, egg whites and oil. Add to dry ingredients; stir until moistened.

    Stir in apple (and any chopped nuts).

  • 4

    Spray muffin cups with nonstick spray coating or use liners. Spoon batter into each (1/4 c or so).

    Bake at 375 degrees for 18-20 minutes or until toothpick comes out clean.
