Bacon & Egg Casserol
Great, fast casserole for breakfast or brunch. Katy and friends from Orlando really like this one!
ingredients
- 2 C Soft Bread Cubes
- 1 1/2 C Milk
- 8 Eggs Slightly Beaten
- 3/4 tsp Salt
- 1/8 tsp Pepper
- 2 Tbsp Melted Butter
- 1/4 tsp Lawry’s Salt
- 8 oz Sliced Swiss Cheese
- 8 slices Bacon- Cooked and Crumbled

Soak the bread in the milk for 5 minutes. Drain and add milk to eggs and salt and pepper. Scramble eggs in butter until soft, but not done. Add cubes and mix gently.

Turn into a greased 8“ x 5” pan.

Sprinkled with the Lawry’s salt and top with the cheese. Top with crumbled bacon.

Bake in 400 degree oven for 10-15 minutes.

Good sized portions and re-heats well later.
