Hearty Split Pea Soup
ingredients
- 1 lb. dry split peas(2c), rinsed and sorted
- 10 c water(2 1/2 qts.)
- 2 med. potatoes, peeled and cubed
- 1 lg. onion, chopped
- 2 med. carrots, chopped
- 2 c cubed, cooked ham (*or 1 meaty ham bone)
- 1/2 c chopped celery
- 5 chicken bouillon cubes
- 1 t dried oregano
- 1/2 t dried basil
- 1 bay leaf
- 1/2 t pepper
- 1/2 t salt

Combine all ingredients in soup kettle;bring to boil. Reduce heat and simmer, covered about 1 1/4 to 1 1/2 hours or until peas and vegetables are tender.

*If using ham bone, simmer peas, water and ham bone about 2 hours, stirring occasionally. Stir in remaining ingredients, bring to boil, reduce heat, cover and simmer 30 minutes, or until vegetables are tender. Remove ham bone, cut off meat when cool enough to handle, chop and return meat to soup, heat through.
notes
If you want more onion, use 2 large, chopped onions.
