Linguine with Chicken Scampi
This is a great, light pasta dish! You can also substitute chicken for a vegetable like zucchini!
ingredients
- Olive oil + salt
- 3/4 lb. linguine
- 3 tbs butter
- 2 1/2 tbs extra virgin olive oil
- 1 1/2 tbs garlic cloves, minced
- 1 lb. chicken, diced or cut into strips
- 1 1/2 tsp salt
- 1/4 tsp black pepper
- 1/3 cup fresh chopped parsley
- 1/2 lemon zest
- 1/4 cup fresh lemon juice
- 1/8 tsp red pepper

Cook linguine according to directions.

Meanwhile, melt butter and oil in a skillet over medium-low heat. Add garlic and saute for 1 minute.

Add chicken, salt, and pepper and saute over medium heat until chicken is cooked through.

Remove from heat, add parsley, lemon zest, lemon juice and red pepper; toss to combine.

Add chicken mixture to drained pasta, toss and serve.
