Hearty Chicken Soup
From Mom’s chef in New Orleans, so flavorful!
ingredients
- 6 chicken things
- 1 Lg onion, chopped
- 1 c celery, chopped
- 1 package frozen mixed vegetables
- 1 ear corn (fresh or frozen)
- Potatoes
- Parsley
- Cilantro
- Assorted chopped vegetables (green and yellow zucchini, mushrooms, green beans, and peas)
- 1/2 stick of butter
- 2-4 garlic toes, diced
- Cornstarch Mix
- 1 c cornstarch
- 1 1/2 c Water

Just cover chicken with water and bring to a boil, remove when it’s falling off the bone. Remove chicken, discard skin and bones and set aside.

Sautee onion and celery in butter until onion becomes transparent, add garlic

Pour water and juices from chicken into large pot with onion sautee

Add potatoes, bring to a boil, add remaining veggies and bring back to a boil

5 minutes before soup is done slowly stir in cornstarch mix

Whisk until it becomes white liquid slowly add 1/2 into rapidly boiling soup.
