Crab Cakes

ingredients

  • 1 can 16 oz lump crabmeat
  • 1/2 small onion
  • 1 large celery stalk
  • 1/2 small red pepper
  • butter
  • 1 tbsp flour
  • 1 tsp dry mustard
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/2 cup dried bread crumbs
  • 1 Tbsp lemon juice

    Pick over crab meat. Grate onion, mince celery and red pepper.

    In 3 quart saucepan over medium heat in 2 tbsp butter cook onion celery and red pepper until tender. Stir in flour, mustard and salt. Cook one minute. Gradually stir in milk and cook until thick. Remove from heat. Stir in crab meat, breadcrumbs and lemon juice.

    In 12" skillet over medium heat in 3 Tbsp butter spoon 8 mounds of crab cakes mixture. Press into cakes. Cook until heated through - about 10 minutes.

Wheat Truck

Everyone in the family had a chance at driving wheat truck. I didn’t last too long. I stripped the gears driving into Hansen elevator and that was the end. I liked the kitchen alot better. Lorretta and Barbara both were very good wheat truck drivers. Jim drove truck for many years. Also Mike and Phil put in a few years.
