Italian Creme Cake
ingredients
- 2 C sugar
- 1 stick butter
- 1/2 C oil
- 5 eggs
- 2 C flour
- 1 tsp soda
- 1 C buttermilk
- 1 can coconut
- 1 C nuts (walnuts or pecans)
- 1 tsp vanilla
- topping:
- 8 oz plain cream cheese
- 1 lb confectioners sugar
- 1/2 stick butter
- 1 tsp vanilla

Combine sugar and butter. Cream until fluffy. Add oil and egg yolks.

Alternate flour with soda and buttermilk.

Add Coconut, nuts and vanilla.

Beat egg whites, fold in.

Bake in 3 8" cake pans. Place in middle of oven bake 30 minutes.

Let cool in pans 10 min.
