Upside Down Plum CakeMike & Keri Aronson
- 12T unsalted butter
- 3/4 c brown sugar
- 6 ripe plums cut into 1/8ths
- 1 c sugar
- 1 t vanilla
- 2 eggs separated
- 1 3/4 c flour
- 2 t baking powder
- 1/2 t salt
- 2/3 c milk
Preheat oven to 350. Butter a 9 or 10" cake pan.
Melt 4T butter with brown sugar, pour into bottom of pan. Arrange plums on butter mixture in a circular pattern.
Cream the remaining butter (8T) with sugar. Add vanilla. Beat in 1 egg yolk at a time.
Sift dry ingredients. Alternate adding dry ingredients and milk, starting and ending with dry ingredients. Beat egg whites until they form soft peaks. Fold egg whites into batter 1/3 at a time. Pour batter over plums
For a 9" pan, bake for 1 hour, 5 minutes.
For a 10" pan, bake for 45-50 minutes. Until top is golden brown and fork comes out clean. Let cool for 20 minutes on wire rack. Invert onto plate. Enjoy!
Works great with other stone fruit, pears, etc.
