Rex's Roma Tomatoes
ingredients
- 14 Roma tomatoes, cut in half lengthwise
- drizzle of olive oil
- salt to taste
- pepper to taste
- 1/3 cup olive oil
- 1 bunch parsley minced
- 2 bulbs minced garlic
- 1 (1 lb.) package spaghetti noodles
- Parmesan cheese

Preheat oven to 425°. Drizzle the cut Roma tomatoes with olive oil, pepper, and salt.

Mix the 1/3 cup olive oil, parsley, and garlic together. Put mixture on top of tomatoes. Bake 1 hour and remove half of the tomatoes.

Cook the spaghetti. Mash the other half of the tomatoes and mix with the pasta. Put 1/2 of the tomatoes on top of the pasta and sprinkle with the Parmesan cheese
