Healthy Chicken Salad Pitas
ingredients
- 2 whole pitas, cut in half, pockets opened
- 1 cup lightly packed mixed baby salad greens
- 1/2 cup light mayo
- 1 tablespoon lemon juice
- salt to taste
- pepper to taste
- 1 lb. diced chicken breast
- 1 large organic apple, cored and diced
- 1/4 cup slivered green onions (scallions) or basil
- 1/2 cup toasted almonds

Cut the pitas in half, then open the pockets. Add 1/4 of the greens to the inside of each pita half. At this point you could also add a slice of cheddar or tomato.

Mix the mayo, lemon juice and about 1/3 teaspoon salt and a few pinches of pepper.

Add the rest of the ingredients, and mix well. Add more mayo if it is too dry. Add 1/4 of salad to each pita, wrap and keep chilled.
