Make this when summer fruit is at it’s best.

ingredients

Fruit mixture:
  • 6-8 large peaches, peeled and thinly sliced (about 6 cups)
  • 1 cup blueberries
  • 1/4 cup sugar
  • 1 Tbsp fresh lime or lemon juice
Topping:
  • 1 cup flour
  • 3/4 cup old fashioned rolled oats
  • 3/4 cup packed dark brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup pecans or walnuts chopped, optional
  • 1/2 cup cold butter, cut into small pieces

    Preheat oven to 375 degrees.

    Gently mix peaches, blueberries, sugar and juice together. Place into 11“x7” baking dish. Combine flour, oats, nuts (if desired). Add butter and work with fingers until crumbly. Sprinkle crumb mixture over fruit and bake 40-45 minutes, or until bubbly and browned. Cool on rack until ready to serve.
