Sliced Steak And Potatoes Bourguignon
ingredients
- 8 small new potatoes
- 1/2 pound medium mushrooms
- 1 1/4 pound boneless sirloin steak
- 2 tablespoons butter
- 1 onion, peeled and sliced
- 1/4 teaspoon cracked pepper
- 1/2 teaspoon thyme leaves
- 1/2 cup red wine
- 1 tablespoon flour

1. Bring 3 cups salted water to boiling in large saucepan. Scrub potatoes; add to boiling water; boil gently, covered, 20 minutes.

2. Peel, slice onion. Wash and halve mushrooms. Slice steak into 3-by 1/2-inch strips. Heat 2 tablespoons butter in large heavy skillet. Quickly sauté steak over high heat, turning so it browns on all sides. Remove to bowl.

3. Add vegetables to same skillet. Lower heat; sauté, stirring, until lightly browned. Add 1/2 teaspoon salt, 1/4 teaspoon cracked pepper, 1/2 teaspoon thyme, 1/2 cup red wine and 1/2 cup water. Cook, covered, 5 minutes.

4. Stir 1 tablespoon flour into 1/4 cup water until smooth. Stir into skillet; simmer, stirring, until thickened.

5. Drain the potatoes very well. Add to vegetables in skillet, along with steak. Stir to combine well; turn into serving dish.
