Lemon Rice Soup

ingredients
- 1/2 cup rice
- 24 oz chicken stock
- 1 tbsp cornstarch
- 1 cup milk
- 3 egg yolks
- 1/2 cup fresh lemon juice
- 2 tbsp olive oil
directions

1. In a large pot, add rice and chicken stock and cood on a simmer about 25 minutes until rice is tender

2. In a separate bowl with a wire wisk mix milk, corn starch, and egg yolks

3. Stream into rice and stock while mixing

4. Add lemon juice, olive oil, and salt and pepper to taste.
