Chesapeake Chowder
ingredients
- 1/2 lb. unpeeled medium size fresh shrimp
- 1/2 lb. fresh crabmeat
- 1 onion (chopped)
- 3 garlic cloves (minced)
- 1 T. olive oil
- 1/4 c. all purpose flour
- 2 1/2 c. chicken broth
- 1 c. dry white wine or chicken broth
- 8 oz. bottle of clam juice
- 5 red potatoes
- 1 T. Old Bay seasoning
- 1/2 c. heavy cream
- Garnish: chopped parsley
directions
Peel shrimp. Drain and flake crab meat, removing any pieces of shell. Set seafood aside. Saute onion, garlic, and celery in hot oil in a Dutch oven on medium high heat for 8 min. or until tender. Stir in flour and cook stirring constantly for 1 min. Stir in broth and next four ingredients. Bring to a boil, cover, reduce heat and simmer, stirring occasionally for 30 min. or until potatoes are tender.Stir in shrimp, crab meat, and heavy cream. Cook over low heat for 5 min.
