Canyon Ranch Gingerbread pancakes
My mom made this for me after I had my first baby, Michala, and they were so delicious, I never forgot them!
ingredients
- 1 1/4 cups whole wheat flour
- 1 tsp. baking soda
- 2/3 tsp ground ginger
- 2/3 tsp ground cinnamon
- 1/3 tsp ground cloves
- pinch salt
- 1 tbl instant decafinated coffee powder
- 1/3 cup hot water
- 1 cup thawed apple juice concentrate
- 3 tbl. melted margarine
- 1 large egg, beaten

1. Combine flour, baking soda, ginger, cinnamon, cloves and salt in a large mixing bowl

2. In a smaller bowl, dissolve instant coffee in hot water. Addapple juice concentate and melted margarine. Allow liquid to cool before adding egg Mix well.

3. Add liquid ingredients to dry ingredients and mix just enough to moisten dry ingredients. The mixture will be lumpy.

4. Spray a hot skillet or griddle with nonstick vegetable coating. Pur the batter, 2 tbl at a time, onto the griddle. Cook until the top of each pancake is covered with tiny bubbles and the bottom is brown. Turn and brown the other side.
