Blue Corn Goat Cheese Taquito's & Avocado - Tomatillo Salsa
This is a simple to make and tasty appetizer. You can find a different but very good recipe for Tomatillo Salsa in the “Everything Else” section of this cookbook. Place the Avocado-Tomatillo Relish in a dish surrounded by blue corn chips. Serve the taquitos on a separate dish. The two flavors of the goat cheese with the blue corn chips are very savory!
ingredients
- Blue Corn Chips (I like Organics brand) minimum of 12.
- Goat Cheese
- Avocado-Tomatillo Relish:
- 3 Ripe Hass Avocados,peeled, pitted, and diced
- 3 tomatillos, husked, scrubbed, and diced
- Juice of 2 limes
- 3 tablespoons canola oil
- 1 tablespoon honey
- Kosher salt and freshly ground black pepper
- 3 green onions, white and green parts, thinly sliced
- 3 tablespoons chopped cilantro
- 1 bowl of blue corn chips

Avocado-Tomatillo Relish:

Stir together the avocados, tomatillos, lime juice, oil, honey, and salt and pepper to taste in a medium bowl. Fold in the green onions and cilantro until combined. This can be made up to 30 minutes in advance and refrigerated.

1. Preheat the broiler

2. Spread each tortilla chip with some goat cheese and arrange on a baking sheet. Place under the broiler and cook until the cheese begins to bubble and turn golden, 1 to 2 minutes. Serve immediately.
