CAROL'S CIOPPINO (or world's greatest cioppino)

This is great with toasted garlic bread dipped into the soup.

ingredients

  • 1 large onion
  • 1 large leek
  • 4-5 garlic
  • 1 large red or green pepper
  • 4 stalks celery
  • 1-2 medium carrots
  • olive oil
  • 2 28 oz can chopped Italian tomatoes
  • 2-3 bay leaves
  • 1/4 c chopped cilantro
  • 1/4 c chopped parsley
  • 2 9 oz cans clam juice
  • 1 tsp vietnamese hot pepper paste
  • few shakes of hot sauce
  • 3 Tlb lemon juice
  • salt and pepper
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 cup or more of white wine
  • 2 Tlb tomato paste
  • 20 shrimp, shelled
  • 1 can clams with juice
  • 1 lb white fish cut in 1 inch cubes
  • 1 bottle oysters with juice

directions

    Chop onion, leek, garlic, pepper, celery, and carrots. Saute in olive oil until soft.

    Add chopped tomatoes and next 10 ingredients. Simmer for at least one hour.

    Add tomato paste. Simmer for another 10 minutes.

  • 4

    Add shrimp, clam and oyster juice, and fish. Cook until fish is done, about 5 minutes. Add clams and simmer for 2-3 minutes. Add oysters the last minute.
