Enchiladas- Cheese
ingredients
Enchilada Sauce- 3 T oil
- 2 T flour
- 3 t chili powder
- 2 C beef broth
- 1/2 t dry oregano
- 1/4 t cumin
- 1/4 t garlic powder salt
- 2 cans tomato puree
- 1 doz corn tortillas
- 1/2 onion chopped
- Grated cheddar cheese and Monterrey Jack cheese (use LOTS of cheese)
- Chopped ripe olives
- Enchilada sauce

Heat oil in saucepan.

Stir in flour and cook 1 min.

Stir in chili powder

add broth, tomato sauce and seasoning.

Simmer 15 min.
Enchiladas

Warm Tortillas, dip in sauce

fill with cheese onions and olives.

Roll up and put in square pan pour remaining sauce over all.

Cover with cheese.

Cook on 350 for 20 min
