My mom's famous meatballs
This is the Italian side of my Mother’s family meatball recipe... and yes, they’re famous.
ingredients
- 1.5 pounds of ground beef*
- 1/2 cup of parmesean cheese
- 1/2 cup of bread crumbs
- 3 eggs (slightly beaten)
- 6 cloves of garlic (pressed or finely chopped)
- handful of chopped fresh parsley or 2 tablespoons of dried parsley
- 1/4 tsp of pepper
- 1 teaspoon of salt
- The 1.5 of ground beef can be anything that looks good at the supermarket that day. The way my mother always taught me was ground chuck. However, sometimes, if you’re lucky, the store will make a “meatloaf” mix of ground pork and beef; that is awsome for meatballs. I also have done this recipe with 1.5 pounds of ground turkey breast. This is also good and very healthy, but if you do turkey breast, add half of a chopped small onion because the mixture can get dry without all that fat and the onion will moisten it up.

Preheat oven to 400 degrees.

In a mixing bowl add the eggs, garlic, salt, pepper and parsley and mix together. Then add the breadcrumbs and parsley and combine into the mixture. Add the ground beef and mix well with your hands. On an ungreased cookie sheet(with a rim) or a baking dish, place 1 inch to 1.5 inch balls of the mixture. Bake at 400 degrees for 20 minutes. Add to your favorite red sauce and simmer for at least 10 minutes. Enjoy!
