Mushroom Potato Pie
ingredients
- 3 cups mashed potatoes
- 1 1/2 cups fresh sliced mushrooms
- 1/4 cup minced onion
- 1 teaspoon fresh lemon juice
- 2 tablespoons butter
- 1/2 teaspoon salt
- pepper to taste
- 1/2 cup sour cream (4 ounces)
directions
Saute mushrooms and onion in butter. Stir in lemon juice, salt and pepper. Place half the mashed potatoes in a layer in a buttered 9-inch pie late or casserole. Top potatoes with mushrooms then sour cream. Cover w/ remaining potatoes. Bake at 350° for 35 to 45 minutes. Cut into wedges and serve.
