Pineapple Fried Rice
Sweet Thai stir fried rice.
ingredients
- 3 C cold rice
- 1 1/2 T oil
- 1 bell pepper diced
- 3 scallions
- 1 can diced pineapple
- 1 head of garlic
- 1 1/2 t canola oil
- Thai pepper oil (optional)
- 1 egg
- 2 1/2 T sugar
- 1 1/2 T fish sauce
- 1-2 T soy sauce
- sesame oil
- Optional:
- (1/2 lb shrimp, or scallops, chicken)

Heat oil over Med-High. Start with bell pepper and scallion. Add garlic when veggies are soft, stir fry until aromatic.

Add meat (seafood later) if using, fry until just cooked through.

Add pineapple until warmed through (about 2 minutes)

Seafood gets cooked quickly until just pink.

Add rice, pressing down into the bottom. Turning and pressing for 1 minute more.

Make a well in the rice, flash fry the egg and mix in when almost set.

Add spices and seasonings and flash fry for 30 seconds - 1minutes.
