Pasta with Wild Mushrooms and Chicken
ingredients
- 1 1/2 oz Dried wild mushrooms
- 4 cutlets chicken -- sliced
- 14 1/2 cans tomatoes ready cut
- 1 red onion -- diced
- 4 cloves garlic -- minced
- 2 tbsp parsley -- minced
- 1/2 C wine
- 2 tbsp olive oil
- 2 tbsp butter
- 1/2 C flour
- 1 lbs pasta-rigatone,bows,shell
directions
1.Soak mushrooms in hot water for 20 min.Save liquid.Rince mushrooms dry on paper towels. 2.Place flour and seasonings in ziploc bag,add chicken slices and shake well.Discard excess flour. 3.In large saucepan melt butter and oil.Saute chicken till well browned.Set aside.Add onion and garlic saute 3-4 minutes. Add mushrooms and their liquid.Cook briskly till reduced by half. 4.Add wine and chicken.Heat for 5 minutes. 5.Serve over 1lb pasta cooked.Garnish with parsley and lots of parmesan cheese.
