Chinese Chicken Salad

ingredients

  • 4 boneless skinless chicken breast halves -- poached
  • 3/4 C slivered almonds -- toasted
  • 1 box chow mein noodles
  • 1 bundle green onion -- slivered
  • 2 red bell peppers -- cut into strips
  • 1 bundle cilantro -- chopped
  • 1 bag angel hair cabbage
  • 2 bags romaine lettuce
  • 1 bottle chinese chicken salad dressing

directions

1. Poach the chicken breasts in chicken broth with herbs for about 15 minutes or until no longer pink. 2. Toast almonds either in a pan with some butter or in the oven. 3. Place the greens in salad bowl and top with the onions and peppers. 4. Cut up the chicken and add with the almonds.. Toss with dressing. I like Trader Joes 5. Add cilantro and chow mein noodles and toss again.

Be creative add whatever veges you have in the house. Bon Apetit!!
