ingredients

  • 1 C dried black beans (2 cups canned)
  • 1/2 C finely chopped red onion
  • 2 large garlic clove -- minced
  • 14 oz black olives -- chopped
  • 1/4 C olive oil
  • 1/4 C red wine vinegar
  • 1/2 tsp salt
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper
  • 1/4 C feta cheese -- crumbled
  • 1/4 C cilantro

directions

When using dry beans, place beans in med. bowl, add water to cover by at least 2" and soak overnight. Drain beans and discard soaking water. Put beans in heavy saucepan add water and cook for 2 hours. Drain. Place in large bowl. Add onion, garlic, olives, oil, vinegar, salt and cumin. Cover and chill.. Spoon evenly on plater and sprinkle on cilantro and feta cheese. Serve with tortilla chips.
