Spinach Salad with Pepper Jelly Vinaigrette
I’m told this recipe mimics that of Zea’s famous spinach salad and I have to agree. Topped with grilled chicken, this is one of my favorite meals.
ingredients
Salad- 6 oz. fresh baby spinach
- 2 T sun-dried tomatoes
- 2 T roasted pecans
- 2 T dried cranberries
- 1 tsp toasted sesame seeds
- 1/4 c feta cheese, crumbled
- 1/4 c pepper jelly
- 2 T balsamic vinegar
- 1/2 tsp garlic powder
- 1/2 tsp kosher salt
- 1/2 c olive oil

Combine all ingredients for the vinaigrette, except for the olive oil, in a bowl and mix with a wire whisk until combined. Stream in the olive oil and whisk together.

Pour over salad.
