Really Good Bean Dip
ingredients
- 2 16-oz cans No-Fat Refried Beans
- 2 tablespoons Olive Oil
- 1/4 cut finely minced Green Onion
- 2-4 cloves minced Garlic
- 1 8 oz. package Cream Cheese
- Red Chili Powder to taste
- 2 Jalapeno Chilies, seeded and minced
- 2 Plum Tomatoes, halved, seeded, minced
- 1/2 to 1 cup grated Chedder Cheese

Heat olive oil and sauté the onion until soft, about 4 minutes. Add the garlic at the last minute. Then add the beans and blend. When hot, stir in the cream cheese.

Season with chili powder to taste. Let this simmer on low to mix flavors, then stir in the jalapeno, tomatoes, and cheese. Let simmer until it begins to boil.

Remove and serve with tortilla chips.
