Braised Boneless Sweet Soy Short Ribs
ingredients
- 2 lb boneless short ribs, trimmed of excess fat and silverskin, cut into 2-inch pieces
- Salt and pepper
- 1/4 cup vegetable oil
- 1 medium-sized carrot, peeled, cut into large chunks
- 1 medium onion, peeled, quartered
- 1 rib celery, cut into chunks
- 4 cloves garlic, peeled, crushed
- 2 qt beef or chicken stock or enough to cover ribs
- 1/4 cup soy sauce
- 1/2 cup brown sugar
- 2-inch piece ginger, washed, cut in half lengthwise
- 3 green onions, trimmed, chopped

Season short ribs with salt and pepper. In a large pot, brown the meat in vegetable oil until dark caramel in color. This may need to be done in batches.

After the meat has all been seared, pour off excess oil leaving about 2 tbsp. Use the oil to brown the carrot, onion, celery and garlic. Cook for about 10 mins, stirring until caramelized.

Add the meat to the vegetables in the pot. Add the stock and the rest of the ingredients. Cover the pot with foil and cook in a 350 degree oven for about 2-2 1/2 hrs until the meat is tender.

Remove the meat. Discard the vegetables. Reduce the braising liquid until it becomes syrupy. Add the meat back into the sauce and coat it.
