Marinated Cheese
A yummy appetizer!
ingredients
- 1/2 cup olive oil
- 1/2 cup white wine vinegar
- small jar of pimento
- 3 TBSP fresh parsley
- 3 TBSP sliced green onions
- 3 cloves garlic, minced
- 1 tsp sugar
- 3/4 tsp dried basil
- 1/2 tsp salt
- 1/2 tsp pepper
- 8 oz. cream cheese (freeze for about 30 minutes -- makes it easier to slice)
- 8 oz. sharp cheddar cheese

Slice cheddar and cream cheese and alternate slices in a row in storage container. Making slices about 1/2 inch in width -- if you make them smaller , it falls apart. Mix all other ingredients together and pour over top of cheeses. Refrigerate overnight.

Transfer to serving dish and pour left over marinate over top. Drain off any watery sauce.

Serve with choice of crackers. I let it out for a little bit before serving to soften up or microwave for about 25 seconds.
