Grandma Madge's Old Fashioned Fudge
The absolute best fudge I have ever eaten. Of course, Madge has the magic touch and mine doesn’t always turn out as perfect as hers.
ingredients
- 4 cups granulated sugar
- 2-3 TB cocoa (to taste)
- 2 TB light corn syrup
- a “pinch” of salt
- 2 cups cream (mhm...2 CUPS)
- 1 tsp. vanilla
- 2 TB butter
- chopped nuts (optional)

Combine sugar, cocoa, corn syrup, salt, and cream in a large heavy saucepan. Stir until sugar is dissolved and the mixture boils. Boil to softball stage (see note) WITHOUT stirring. Remove from heat; add butter and vanilla. Cool until just warm, then beat until thick and creamy. Stir in nuts (if used).

Pour into a buttered pan and cool. Cut into squares.

Alternative: form into a roll and wrap in plastic wrap. Cool and slice to serve.
notes
1. Soft-Ball Stage 235° F–240° F sugar concentration: 85% At this temperature, sugar syrup dropped into cold water will form a soft, flexible ball. If you remove the ball from water, it will flatten like a pancake after a few moments in your hand.
