Curried Turkey-Peanut Soup
ingredients
- 2 T. oil
- 1 onion, chopped fine
- 1 sweet potato, cut into 1/2" chunks
- 2 minced garlic cloves
- 1 T. curry powder
- 4 cups chicken broth
- 1 14.5 oz. can diced tomatoes with green chilies
- 1/2 c. long grain rice
- 1/3 c. creamy peanut butter
- 2 c. leftover turkey meat, in bite-size pieces
- 2 T. lime juice
- Salt and pepper

1. Heat oil in large Dutch oven over medium high heat. Cook onion and sweet potato 5 minutes. Stir in garlic, curry and cumin; cook 30 seconds.

2. Whisk in broth, tomatoes, and rice and bring to a boil. Reduce heat to medium low, cover, and simmer 15 minutes.

3. Stir in peanut butter until incorporated; stir in turkey and lime juice. Season with salt and pepper. Serve.
