Jack's Favorite Fruit Cake
Fruit Cake? A Holiday Favorite? Why, yes.
ingredients
- 1 1/2 Lbs. Butter
- 1 lb. Sugar
- 2 tsp. Vanilla Extract
- 1 tsp. Lemon Extract
- 10 Eggs
- 6 Cups Flour
- 1 tsp. Baking Powder
- 1 scant teaspoon Salt
- 1 lb. Raisins
- 1 lb. Jar of Grape-Apple Jelly
- 1 lb. Mixed Fruit
- 1 lb. Chopped Dates
- 1 small carton of Candied Pineapple
- 1 lb. Candied Cherries
- 2 small cartons Orange Peel
- 1 1/2 lbs. Black Walnuts
- 3 lbs Pecans
- 2 lbs English Walnuts (Weighed in Shells)
- 2 lbs Brazil Nuts (Weighed in Shells)

In a mixer, cream: Butter, Sugar, Vanilla, Lemon

Beat in the Eggs-beat well

Mix: Flour, Baking Powder, Salt and stir into batter.

In another bowl, add all the fruits and dates. Coat lightly with flour

Add fruit to batter; stir in grape-apple jelly.

Stir Nuts into Batter

Bake at 250° until tester comes out clean. Put 1/2 cup water in dish in oven.
