Wagon Wheels with Tomatoes and Mozarella

ingredients

  • 12 oz. wagon wheel pasta
  • 1/2 c. olive oil
  • 2 tsp. minced garlic
  • 1 pint halved grape or cherry tomatoes
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 c. torn basil
  • 1 tub cherry size balls of fresh mozarella
  • grated parmesan chees

directions

Boil pasta as package directs. About 5 minutes before pasta is done, heat olive oil in a large skillet over low heat. Add garlic; cook one minute then stir in tomatoes, salt, pepper; saute until tomatoes soften.(about 3 minutes). Drain pasta; return to pot. Off heat stir, in tomatoe mixture, basil, mozarella. Serve with Parmesan cheese.
