Mediterranean Potato Salad with Shrimp and Feta
ingredients
- Dressing:
- 1.5tbsp chopped fresh basil
- 1tbsp fresh lemon juice
- 2tsp olive oil
- 3/4tsp sugar
- 1/4tsp ground black pepper
- 1/4tsp dijon mustard
- Salad:
- 5c small red potatoes, quartered
- 1/2tsp salt
- 1/4tsp ground pepper
- 1lb cooked/peeled shrimp
- 3c thinly sliced romaine lettuce
- 1c red pepper, sliced into 1/4in strips
- 1c yellow pepper, sliced into 1/4in strips
- 1c thinly sliced red onion
- 1/2c crumbled feta cheese
- 2tbsp chopped kalamata olives

1. Prepare dressing, mixing well with a whisk.

2. Arrange potatoes in a single layer on a dish; sprinkle with 1/2tsp salt and 1/4tsp pepper. Microwave at high for 15min. Place in a large bowl.

3. Add shrimp, 1tbsp dressing. Toss to combine. Add remaining dressing, lettuce, peppers, onion and cheese. Toss gently. Top each serving with olives.
