Potato Salad

The secret to this recipe is tossing the hot potatoes with the lemon juice and oil mixture.

ingredients

  • 8 medium potatoes
  • 4 hard boiled eggs, sliced
  • 4 T lemon juice
  • 1 – 1 1/4 c mayonnaise
  • 4 T oil
  • 3 T cider vinegar
  • 1/2 t pepper
  • salt to taste
  • 1/4 c mustard
  • 3 T sweet pickle relish
  • 1 small diced onion

directions

Boil potatoes until tender. Drain, peel and dice. Toss with lemon juice, oil and salt. Cool. Add pepper, celery, onion, relish and eggs (reserve some egg for top of salad). Blend 1 c mayonnaise and mustard with vinegar, toss over the potato salad, gently folding until all pieces are coated. Add more mayonnaise if needed. Top with extra slices of boiled eggs. Sprinkle with paprika. Serve warm or chilled
