Vegetable and Sausage Pilaf
ingredients
- 1 tbsp vegetable oil
- 1 tbsp butter
- 2 green onions, chopped
- 1 carrot and stalk celery, chopped
- 1/3 cup chopped sweet red or green pepper
- 1 cup parboiled long-grain rice
- 2 cups chicken stock or water
- 4 Italian sausages
- Salt and pepper
- 1 tbsp chopped fresh parsley

1. In skillet, heat oil and butter over medium heat; cook onions, carrot, celery and red pepper, stirring occasionally, for 3 minutes or until softened. Add rice; cook, stirring, for 1 minute or until coated.

2. Spoon into greased 8 cup (2L) casserole; pour in stock. Cover and bake in 350 degree oven for 30 to 35 minutes or until rice is tender and liquid absorbed.

3. Meanwhile, cut sausages into bite size chunks. In skillet, cook sausages over medium heat for 7 to 8 minutes or until browned and cooked through. With slotted spoon, remove sausages and stir into rice mixture; let stand for 5 minutes. Season with salt and pepper to taste; sprinkle with parsley.
