Dad's Soba Noodle Dinner

ingredients

  • 8 ounces dried soba noodles or udon
  • 3 cups water or broth
  • 4 slices fresh ginger
  • 1/2 lb firm tofu, cut into cubes
  • 3 bok choy, stalks chopped (or any green)
  • 2 carrots sliced
  • Scallions chopped
  • Tamari to taste
  • Drop of roasted sesame oil (opt)

    In a large saucepan over high heat, cook noodles according to package directions. When noodles are al dente, drain and rinse under cold water.

    In a large saucepan over high heat, bring broth and ginger to boil add carrots, cabbage and tofu. Cover, reduce heat to low, and simmer 5 minutes.

    Flavor with Tamari and seseme oil

    Add noodles.

    Divide among four soup bowls. Garnish with scallions.
