Apple Tarts

This is from the Donna Hay Cookbook. James and I made this at our first dinner party in Houston. They called me Martha Stewart. Enough said.

ingredients

  • 1 1/2 sheets ready-prepared puff pastry
  • 2 oz butter, melted
  • 1 Tbsp sugar
  • 3 apples, cored and thinly sliced
  • 1/2 tsp cinnamon
  • 2 Tbsp brown sugar
  • 1 Tbsp lemon juice

directions

Preheat oven to 355 degrees. Brush the pastry sheets with butter and cut into six pieces. Press into muffin tins, discarding the excess pastry. Sprinkle with sugar. Combine the apples, cinnamon, brown sugar and lemon juice and divide between the pastry cases. Bake for 20 minutes or until the apples are soft and the pastry is golden and crisp. Serve with vanilla ice cream or whipped cream.
