Rice Pudding
ingredients
- 1 1/3 cup water
- 1/2 cup uncooked rice
- 3 eggs, yolks only
- 1/2 cup granulated sugar
- 1 tbsp corn starch
- 1/4 cup butter
- 2 1/2 cups milk
- 1/4 tsp almond extract
- 1 tsp vanilla extract

Bring water to a boil in a medium sized saucepan; add rice. When boiling again, reduce heat & cook 15-20 minutes. Heat oven to 350 degrees.

In 1 1/2 qt casserole beat the egg yolks with the sugar and cornstarch.

Stir in the butter, milk, almond, vanilla, and cooked rice.

Place casserole in a slightly larger pan and fill pan with hot water. Bake 1 hour (usually longer) stirring 3-4 times.
