Brushchetta
ingredients
- French baguette
- 4-5 roma tomatoes, seeded and chopped
- 1/2 red onion, chopped
- 1/4 Cup fresh basil, chopped
- 1/4 Cup mozzarella, finely shredded
- 2 T. parmesan
- 2 T. red wine vinegar
- 4 T. Olive oil
- salt and pepper

Heat oven to 400 degrees. Slice bread diagonally, approx 1 inch thick. Place bread onto baking sheet. Brush bread with olive oil. Toast bread in oven for 5-10 minutes until just golden.

Combine remaining ingredients. Top bread slices with tomato mixture. Heat in oven until cheese begins to melt, approx 5 minutes.

*For a crowd: Leave tomato mixture in a serving bowl, and arrange toasted bread slices around bowl. Serve chilled.
