Tomatoes, Swiss Chard and White Beans
White bean casserole
ingredients
- 1/2 cup water
- 1 onion finely chopped
- 1 garlic clove minced
- 1 can diced tomatoes
- 3 cans cannelloni beans in their juice
- 2 cups Swiss chard cleaned and chopped 1 tsp fresh lemon juice
- Parmesan cheese (optional)

Saute the onion and garlic in the water until soft but not browned
- 2
Add the beans and tomatoes and heat until simmering
- 3
Add Swiss chard and heat for another 10 minutes or until chard is quite limp
- 4
Place in a casserole dish, stir in lemon juice and top with Parmesan if desired.

This is a great side dish for buffets with cold meats and lots of green salads.
