Chicken Parmigiana
Really easy and a great dinner for company!!! Looks more impressive than it really is.
ingredients
- 8 Chicken breasts
- Dried bread crumbs (can use Italian breadcrumbs)
- Olive oil
- Mozzarella Cheese
- 15 1/2 ounce Marinara Sauce (I use Paul Newman’s)
- Grated Parmesan Cheese

If you don’t use thin chicken breasts, you will have to get regular ones and pound them with a meat mallet about 1/4 inch thickness.

Place bread crumbs in pie plate.

Moisten chicken breasts with water; then dip into bread crumbs to evenly coat.

Place in hot olive oil and brown on both sides. Add more oil as you add more chicken breasts.

Slice mozzarella cheese lengthwise into strips.

Put chicken in Pyrex dish and lay cheese on top to cover. Spoon marinara sauce over all and sprinkle with Parmesan.

Bake in 350 degree oven until chicken is fork-tender, about 30 minutes.

Serve with pasta, green salad and french bread.
