Striper Burgers

Okay striper nuts. You may be hardcore on the surf, but you might get lazy in the culinary department. For once, please leave the lemon, butter and Old Bay seasoning alone. Here’s an easy recipe for striper burgers with a kick that comes together so fast, you’ll be able to make them, put two away with a brew, and be back out before the tide switches.

ingredients

  • 1 lb. striped bass fillet
  • 1 scallion
  • 1 egg
  • 2 tablespoons fresh dill
  • 4 tablespoons butter
  • 1/4 cup breadcrumbs
  • 1 tablespoon white wine
  • 6 tablespoons mayonnaise
  • 1 tablespoon dry wasabi powder (optional)
  • 3 tablespoons butter

    1. Place fillets, scallion, dill, egg, wine, breadcrumbs and two tablespoons of mayonnaise into a food processor. Pulse the processor several times. The goal is to achieve a thick consistency that allows you to easily form the combined mixture into patties.

    2. Once equal-sized patties are formed, melt three tablespoons of butter in a heavy skillet.

    3. Reduce the heat to medium and begin frying the patties. Make sure you get an even golden-brown on each side of the patties.

    4. To spice up the burgers, add the dry wasabi powder to four tablespoons of mayonnaise and mix it thoroughly. Spread the wasabi-spiked mayo on the patties and serve by themselves or on a bun like a traditional burger.

Try experimenting with other species in this recipe. Any white-fleshed fish, such as cod, flounder, grouper or even Mahi can be made into a burger. If you're a spicy food fanatic, add a few dashes of your fav hot sauce to the mixture before blending.
