Cheese and Potato Soup
ingredients
- 2 Tbs vegetable oil
- 1/2 cup chopped celery
- 1/2 cup chopped carrot
- 1/2 cup chopped onion
- 1/2 tsp dried thyme
- 3 Tbs flour
- 2 cups chicken broth
- 2 cups milk
- 1 10-12 oz potato, peeled and diced
- 1 cup packed shredded sharp cheddar cheese (4 oz)
- 1/2 cup chopped ham
- fresh parsley
directions
Heat oil in large saucepan over medium heat. Add onions, celery, carrots, and thyme. Saute for 5 minutes. Sprinkle flour over and saute for 2 minutes. Gradually whisk in broth, then milk. Add potato and bring to a boil. Reduce to simmer and cook 20 minutes. Add cheese then ham. Season to taste.
