Mrs. Lundford’s Rice
Wild rice casserole that’s perfectly paired with pork, lamb or grilled chicken.
ingredients
- 1 package Uncle Ben’s Original Wild Rice (NOT “fast cooking”)
- 1 cup long grain rice (NOT instant)
- 2 cans Beef Consomme soup
- 2 cans French Onion soup
- 1 stick butter, cut into a few pieces
- (optional) 1 jar sliced mushrooms, drained
directions
Heat oven to 350 degrees. Combine all ingredients (including the seasoning mix inside the wild rice box) in a casserole dish. Cover and bake for 90 minutes. Stir halfway through cooking time.

Easy, and so much better than plain, old Uncle Ben's! Great side dish for chicken, turkey, pork ,lamb, etc.
