Tofu, Snow Peas, and Red Peppers
ingredients
- 3 oz tofu
- 1 tbsp. gram flour
- 1/2 tsp. ground cumin
- 1 1/4 tsp. lite salt
- 2/3 lb. snow peas
- 1 large red bell pepper
- 2 garlic cloves
- 1/2 inch fresh ginger
- 1/2 white onion
- 1 large tomato
- 1 cup skim milk
- oil for deep frying
- 1 tbsp. vegetable oil
- 1 tbsp. margarine
- 1/2 tsp. cumin seed
- 1/2 tsp. turmeric
- 1/2 tsp. garam masala
- 1/2 tsp. garlic salt
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground coriander
- 1/2 tbsp. chili powder
- 1/2 tsp. soy sauce
- 1/2 cup chopped fresh cilantro

First, wash and take the ends off the snow peas. Cut the bell pepper into the same length as the snow peas. Make a finely chopped mixture of garlic cloves and peeled fresh ginger. Separately chop white onion, tomato and cilantro. Cut the tofu into small pieces. Mix the gram four, ground cumin and 1/4 tsp. lite salt. Coat the tofu pieces with this mixture.

Deep fry tofu until brown. Lay on paper towels to drain. Heat oil and margarine in a large pan. Add cumin seed and cook until it turns brown. Add white onion, garlic/ginger mixture, turmeric, garlic salt, 1 tsp. salt, ground cinnamon, curry powder, ground coriander, chili powder and garam masala. Stir until spices are well mised and the onion is brown. Add tomato, snow peas, red bell pepper and soy sauce. Cook covered for 5 minutes. Add cilantro, fried tofu pieces and skin milk. Stir, and cook covered for 15 minutes. Serve.
