My Everyday Salad

I eat a variation of this salad a lot. You can make it vegetarian or add Tuna, chicken etc. I like to add beans or nuts & seeds to it for a complete meal.

ingredients

  • One of or a combination of:
  • Mixed baby greens, Arugala, Spinach, Cabbage or any lettuce.
  • Tomatoes - cherry or regular
  • Broccolli
  • Grated carrot
  • Onion
  • Cucumber
  • Peppers - any kind
  • Herbs such as Cilantro, Basil or parsely
  • Dressing: (Enough for 1 large or 2 smaller salads)
  • 1/4 cup Olive oil
  • 1 tbsp. Balsamic Vinegar
  • 1 tbsp. Lemon juice
  • 1 tbsp. Maple syrup
  • 1 tsp. Grainy mustard
  • salt & pepper
  • (Optional)chilli pepper flakes, Grated ginger, Garlic
  • Toasted sesame seeds, pumpkin seeds, walnuts or sunflower seeds.

    Toss all ingredients in a bowl.

  • 2

    Double or triple vegie ingredients and dressing for a crowd.
