My Everyday Salad
I eat a variation of this salad a lot. You can make it vegetarian or add Tuna, chicken etc. I like to add beans or nuts & seeds to it for a complete meal.
ingredients
- One of or a combination of:
- Mixed baby greens, Arugala, Spinach, Cabbage or any lettuce.
- Tomatoes - cherry or regular
- Broccolli
- Grated carrot
- Onion
- Cucumber
- Peppers - any kind
- Herbs such as Cilantro, Basil or parsely
- Dressing: (Enough for 1 large or 2 smaller salads)
- 1/4 cup Olive oil
- 1 tbsp. Balsamic Vinegar
- 1 tbsp. Lemon juice
- 1 tbsp. Maple syrup
- 1 tsp. Grainy mustard
- salt & pepper
- (Optional)chilli pepper flakes, Grated ginger, Garlic
- Toasted sesame seeds, pumpkin seeds, walnuts or sunflower seeds.

Toss all ingredients in a bowl.

Double or triple vegie ingredients and dressing for a crowd.
