One-Egg Chocolate Cake

ingredients

  • 2 squares unsweetened chocolate (2 oz)
  • 1/2 c. water
  • 1 c. sifted “Soft as Silk” cake flour (you can use regular flour minus 2 tbs)
  • 1 c. sugar
  • 1/2 tsp baking soda
  • 1/4 tsp double action baking powder
  • 1/2 tsp salt
  • 1/4 c. Crisco
  • 1/4 c. buttermilk
  • 1/2 tsp vanilla
  • 1 egg

    Boil water and add to large mixing bowl with unsweetened chocolate. Stir in water gradually until chocolate is melted. Cool.

    Sift together cake flour, sugar, baking soda, baking powder, and salt. Add Crisco to dry mixture. Beat vigorously for 1 minute with electric mixer on medium speed. Scrape sides and bottom of bowl constantly.

    Add buttermilk, vanilla, egg, and chocolate mixture to the flour mixture beating for 1 more minute.

    Pour batter into prepared pan. To prepare pan for cake, grease or spray pan, cut a wax paper to fit, grease or spray again and lightly flour. Shake off excess flour.

    Bake at 350° for 35 to 40 minutes.
